CRUNCH DROP COOKIE 
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. soft butter
1 c. brown sugar, packed
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. raw quick cooking oats
2 c. flaked coconut

Preheat oven to 375 degrees. Lightly grease cookie sheets.

Stir flour, soda and salt; set aside.

In large bowl of electric mixer, at medium speed, beat butter, sugars, eggs and vanilla until light and fluffy.

At low speed, beat in flour mixture until well combined.

Stir in oats and coconut until well blended, to make a stiff dough.

Drop dough 2 inches apart by rounded teaspoonsful. Bake 12-15 minutes. Remove to wire rack; cool.
