VEGGIE CHEESE SPREAD 
1 c. part skim Ricotta cheese
2 tbsp. carrot, shredded
2 tbsp. radish, minced
2 tbsp. onion, minced
1 tbsp. chopped fresh parsley
2 tsp. chopped fresh dill
1 1/2 tsp. Dijon mustard
1 tsp. lemon juice
1/8 tsp. black pepper
8 drops hot pepper sauce (optional)

Combine all ingredients and stir. Blend well. Chill 1 hour. Serve with crackers, melba toast or French bread. 1 cup @ 25 calories, 1 gram fat.
