SIMNEL CAKE 
3/4 c. butter
2 c. sugar
4 eggs
2 c. flour
1/2 tsp. salt
1/3 c. shredded lemon & orange peel
1/2 c. currants or raisins
1 can almond paste or almond filling

Cream butter and sugar until smooth. Add eggs one at a time, beating after each addition. Sift flour and salt together and add to first mixture. Dust peel and currants or raisins with a little flour and add to batter.

Grease and flour 9 x 13 inch pan; spread in half of the batter, filling, batter. Bake in preheated 325 degree oven for 45 minutes or until done. Ice with a thin white icing flavored with almond extract (or dust with powdered sugar). Enjoy.
