TOMATO PUDDING | |
1 lg. can tomatoes 8-12 unsalted crackers (or 4-5 leftover biscuits) 1 1/4 to 1 1/2 c. sugar, depending on taste 1 tsp. lemon flavoring Cinnamon, nutmeg to taste 1/2 stick butter Put tomatoes into saucepan. If whole, mash tomatoes. Add crumbled crackers (or biscuits), sugar, spices, butter and flavoring. Cook over medium heat until well blended and some water is cooked out-approximately 10 minutes. Put into ungreased baking dish and bake at 375 degrees for about 30 minutes or until edges are crusty. |
