HUMMUS (GARBANZO BEANS) 
1 c. cooked or canned garbanzo beans (chick peas)
1/4 c. tahini (sesame seed butter)
1 clove garlic, crushed
Juice of 1/2 lemon
2 sprigs parsley, chopped
Salt to taste
Olive oil, 1 tbsp.

Mash with fork, or lightly blend in processor. Add water if too thick. Great in pita bread sandwiches, with carrots, tomatoes and lettuce. Or use as a sauce over rice, other veggies or lamb.
