CRUNCHY FISH FILLETS 
2 lbs. fish fillets, fresh or frozen
3 c. Rice Krispies cereal, crushed to 1 1/2 cups
1/2 tsp. salt
1/8 tsp. pepper
1 tbsp. dried parsley flakes
1/2 c. butter, melted

If frozen fish is used, thaw, rinse and pat dry, set aside. Place crushed Rice Krispies cereal in shallow dish. Stir in salt, pepper and parsley flakes. Set aside. Pour butter into second shallow dish. Dip fish in butter. Coat with cereal mixture. Place in single layer in well-greased or foil-lined shallow pan. Bake at 375 degrees about 25 minutes or until fish flakes easily when tested with a fork. Do not cover pan or turn fish while baking. 6 servings.
