BAKED FISH WITH WINTER
VEGETABLES
 
Preheat oven to 400 degrees.

Cut as many carrots as desired into 2 inch pieces cut at an angle.

Slice 1 large onion.

Cut desired amount of potatoes into 2 inch chunks.

Crush 2 cloves of garlic or use 1 tablespoon of garlic powder.

Place vegetables in a heavy 13x10 dish. Toss garlic around in vegetables. Drizzle with 2-3 tablespoons of olive oil. Bake turning vegetables once or twice until the edges are brown.

Sprinkle 1/4 cup parsley and 1 tablespoon lemon juice over vegetables. Push vegetables aside and add 4 fish fillets. Arrange vegetables over the top of the fish and bake 20 minutes longer or until fish flakes. Very good with orange roughy fish.
