FISH BAKED IN FOIL 
4 fish fillets, orange roughy, cod or perch (1 lb.)
1 tbsp. vegetable oil
Salt and pepper to taste
1 sm. carrot, sliced lengthwise
1/2 med. onion, sliced
1 tbsp. minced fresh parsley or reduced amount of parsley flakes

Place each serving in center of a 12 inch square of foil. Brush with oil. Sprinkle with salt and pepper. Put carrot and onion on fish. Seal foil. Place on shallow pan. Bake for 25 to 30 minutes in a preheated 450 degree oven. Fold back foil, sprinkle fish with parsley. Yield 4 servings.
