FOIL-BAKED FISH FILLETS 
1 lb. fresh or unthawed fish
1 1/2 tsp. vegetable oil (on foil)
1 1/2 tsp. lemon juice
1 tbsp. finely chopped onion
1 tbsp. finely chopped celery
1/8 tsp. salt
Dash of pepper
1 tbsp. vegetable oil
3 (12 to 14 inch) pieces aluminum foil

Preheat oven to 400 degrees. Cut and debone fish. Put on center of foil (where oiled). Sprinkle with lemon juice and divide ingredients to each foil. Tightly secure each foil. Bake 25 minutes on shallow pan. Use a wide pancake turner to remove and put on plate; unwrap and transfer fish and sauce.

4 oz. meat = 4 meat, 1 gram carbohydrate, 29 grams protein, 17 grams fat, 277 calories, 171 sodium (for low sodium diets, omit salt and use freshwater fish).
