BAKED RICE PILAF | |
1 c. uncooked long grain rice 2 tbsp. safflower/sunflower butter 2 cloves minced garlic 2 c. hot defatted low sodium chicken broth 1/4 tsp. salt 2 tbsp. freshly grated Parmesan cheese Saute garlic and rice in butter until golden. Pour into casserole, add broth and salt. Cover tightly and bake at 350 degrees for 25 minutes or until liquid is absorbed. Add the cheese and stir until well mixed and rice is fluffy. Nutritional Analysis: Serving size 1/4 recipe. 208 calories; 2.5 mg cholesterol; 191 mg sodium; 49 mg potassium; 4.0 gm fat, 18% calories from fat, 1.3 gm polyunsaturated, 1.1 gm saturated.
