BILL JOHNSON'S BARBECUE BRISKET | |
1 (3 or 4 lb.) brisket MARINADE MIXTURE: 2 tbsp. liquid smoke 1 tsp. garlic salt 1 tsp. onion salt 2 tsp. celery seed 2 tsp. Worcestershire sauce Put meat in foil big enough to wrap meat entirely. Coat both sides with marinade mixture. Wrap and marinate meat in refrigerator overnight. Add 1 1/2 teaspoons salt and 2 teaspoons pepper, rewrap and bake in slow 300 degree oven for 4 hours. Using 1 cup or more of Bill Johnson's barbecue sauce, pour over brisket and leave uncovered for an additional hour. Baste occasionally. |
