PUMPKIN CAKE ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. baking powder
3/4 c. flour
1 tsp. lemon juice
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped walnuts
1 c. 10X sugar
2 pkg. (3 oz.) cream cheese
4 tbsp. butter
1/2 tsp. vanilla

Beat eggs. Add sugar, pumpkin, baking powder, flour, lemon juice, salt and spices. Mix well. Spread out on greased and floured jelly roll pan and bake 15 minutes at 375 degrees. While hot, turn out onto a tea towel that has been sprinkled with 10X sugar.

Mix remaining 10X sugar, cream cheese, butter and vanilla together. Spread onto pumpkin roll. Roll up like a jelly roll. Wrap in tea towel and allow to cool thoroughly. (Walnuts are optional for use in filling.)
