ROSE'S ZUCCHINI CASSEROLE 
Slice and cook 6 small zucchini until tender; drain. Crush 1/2 pound Hi Ho or Ritz crackers. Melt 1/2 cube butter and mix with crumbs. Chop 1/2 pound Velveeta cheese into small cubes. Place part of crumbs in oblong casserole. Layer zucchini, cheese, and 1/4 cube butter; cut into small cubes.
