HARVARD BEETS 
2 c. beets, diced
1/2 c. sugar
1 1/2 tbsp. flour
2 tbsp. butter
1/4 c. vinegar
1/4 c. beet juice
1/2 tsp. salt

Mix sugar and flour and add to melted butter. Add vinegar, beet juice, and salt. Boil, stirring until thick and smooth. Add beets and let stand for at least 30 minutes.
