UNCOOKED CUCUMBER PICKLES | |
1 gal. cucumbers, washed & sliced 1 c. salt 1 qt. water 3 tbsp. alum Vinegar 5 lbs. sugar Put sliced cucumbers in gallon jar. Mix salt and water, and pour over cucumbers. Be sure cucumbers are completely covered. Let stand 2 to 5 days. Wash and rinse in cold water and drain. Melt alum in water and cover cucumbers. Let stand 2 days. Wash and drain. Cover cucumbers with vinegar and soak 2 days. Drain vinegar and take cucumbers out of jar. Layer cucumbers back in jar alternately with a layer of sugar. Repeat layering until you've used 5 pounds of sugar. |
