SHRIMP SCAMPI | |
2 lbs. lg. shrimp 1 c. melted butter 1/2 c. olive oil 1/2 c. dry vermouth 1 tbsp. minced garlic 1 tsp. salt 1/2 tsp. white pepper Juice of 1 lemon 4 tbsp. chopped parsley 1/4 c. chopped scallions 1/4 c. grated Parmesan cheese 1 tbsp. capers 2 tbsp. cognac (ignite and pour over shrimp) Wash pre-cooked shrimp (tail on). Pat dry. Make marinade by putting melted butter, olive oil, vermouth, garlic, salt, pepper, and lemon juice in blender at high speed for 10 seconds. Pour marinade over shrimp and let stand a minimum of 1 hour. Place shrimp on broiler pan and sprinkle with remaining ingredients. Broil 5 minutes in preheated broiler. |
