TWICE BAKED POTATOES 
8-10 med. sized potatoes
1 c. lowfat yogurt
1 egg
Chives
Salt
1 c. grated Cheddar cheese
Paprika

Bake potatoes in 350 degree oven for 1 hour. Do not wrap in foil. When done, cut tin half and scoop out inside. With mixer, whip potatoes and add yogurt. Add egg, 1-2 tablespoons chives and salt to taste. Last, add cheese.

You do not want cheese to melt when you add it at this point. Fill halves with potato mixture and sprinkle tops with paprika. Put on tray and freeze. When frozen, you can drop them into a plastic bag and return to freezer. To reheat, bake at 350 degrees for 30 minutes.
