GINGERBREAD COOKIES 
1 1/2 c. sugar
1 c. butter
1/3 c. molasses
1 egg
3 1/4 c. flour
2 tsp. baking soda
2 tsp. ginger
2 tsp. cinnamon
1/2 tsp. salt

Mix together. Refrigerate 1 hour minimum. Take 1/4 of dough and roll to 1/8 inch thick on floured surface. Keep remaining dough in refrigerator. Place on ungreased sheet and bake 6 to 9 minutes at 350 degrees. Great recipe for cut out cookies, gingerbread houses, etc.

This is a great recipe for the base of a good gingerbread cookie. I had to add a little water, as my dough was too dry, then refrigerate for a little. It's a delicious, mild gingerbread taste. I'll likely add a bit more spice (more ginger, some cloves and allspice), but I do love this cookie. And best of all, it's soft and chewy!

I used this to make gingerbread houses. Although my cuts were clean, the shapes rounded around the edges and the pieces grew substantially. On the upside, the taste is delicious, I would use this for cutouts anytime and very easy to mix together.
