SPICED CARROTS | |
1/2 c. water 8 med. size carrots, peeled & cut into lg. match sticks 1 cinnamon stick 3/4 tsp. ground cumin 1/2 tsp. ground ginger 1/4 tsp. ground coriander 1/8 tsp. cayenne pepper 1 pkg. Sweet & Low 2 tsp. lemon juice In heavy 10 inch skillet bring water to boil, add carrots and spices. Adjust heat so the liquid bubbles gently, cover and simmer for 10 minutes, uncover. Add Sweet and Low and lemon juice, raise heat to high and boil until most of the liquid has evaporated and carrots are just tender, about 5 minutes. Do not over cook, these carrots should be soft. Measure servings. Single serving = 1 cup vegetable. |
