SPANISH RICE 
4 tbsp. vegetable oil
2-3 c. boiling water
3 tbsp. chili powder (red)
1 tbsp. garlic powder
5-6 Jalapeno peppers or 1 sweet pepper, diced
1 c. uncooked rice
1 tsp. salt
1 med. onion, diced
8 oz. tomato sauce

Place vegetable oil in heavy 10 inch skillet on hot heat. Place rice in skillet and stir frequently until rice is slightly toasted brown in color. Add boiling water. Let boil for 5 minutes. Add tomato sauce, peppers, onions, salt, garlic powder and red chili powder. Turn heat down and simmer 20-30 minutes. Cover and let stand for 15 minutes. Serve while hot.
