RAW SPINACH SALAD 
1/2 pound uncooked spinach, finely shredded
1 medium onion, finely chopped
4 tbsp. diced celery
6-8 radishes, chopped
4 hard-cooked eggs, sliced
Salt to taste

Chill salad ingredients and toss together lightly.

HOT FRENCH DRESSING:

1-2 slices bacon cut into pieces and fried crisp
3-4 tbsp. fat (bacon or ham)
1/2 c. vinegar
1 tbsp. sugar

Put the sugar and vinegar into the pan in which the bacon has been cooked or fat heated. Bring to boiling while stirring enough to dissolve the sugar and mix the fat and vinegar. Pour over salad material and serve at once.
