RAW CRANBERRY SALAD 
4 c. grated yellow apples
12 oz. frozen Citrus Hill orange juice
12 oz. frozen Seneca apple juice (not sugar added but it is sweeter)
1 (12 oz.) sack cranberries, cleaned and grated
4 c. celery, when grated
8 oz. sack pecans
2 (6 oz.) pkgs. each sugar free strawberry Jello
3 c. boiling water
Red food coloring (to suit your eye)

In a big bowl, mix apples and juices so the apples won't turn dark. Add next 3 ingredients. Add Jello to boiling water. Stir to dissolve. Then add some big spoons of fruit and vegetable mixture to Jello to cool it. Mix with rest of fruit and vegetables. Add food coloring. Put in smaller containers and chill. Makes about 3 1/2 quarts.
