SWEDISH PANCAKES | |
1 c. flour 1 tbsp. sugar 3/4 tsp. salt 1/2 tsp. baking powder 2 eggs, beaten 1 1/2 c. milk 2 tbsp. melted butter 2 tsp. grated lemon rind Sift together flour, sugar, salt and baking powder. Combine well beaten eggs and milk; stir into dry ingredients. Add melted butter and lemon rind. Beat until smooth. Pour into frying pan or griddle, let spread. Pancakes should be about 4 inches in diameter. Before serving sprinkle with confectioners' sugar. |
