CRANBERRY MUFFINS 
3 c. all-purpose flour
3/4 c. granulated sugar
1 tbsp. baking powder
1/2 c. milk
1/2 c. butter, melted
2 eggs
1 tbsp. vanilla
1 1/2 c. fresh cranberries
3/4 c. chopped pecans
1 tbsp. grated orange peel

Preheat oven to 375 degrees. Combine flour, sugar and baking powder in a large mixing bowl. Make a well in center of mixture. Add milk, butter, eggs and vanilla. Stir just until all ingredients are moistened, batter will be lumpy. Stir in remaining ingredients. Fill greased or paper lined muffin cups 2/3 full with batter. Bake 25-30 minutes or until muffin springs back when touched. Makes about 2 dozen muffins.
