With pastry blender cut in shortening until mixture resembles coarse crumbs. In a separate bowl mix eggs, orange juice and orange peel; beat lightly. Stir into flour mixture until moistened. Gently stir in cranberries and nuts. Pour into greased bread pans. Bake at 350 degrees for 55 minutes. Makes 2 loaves. A couple of cranberries hints that might be useful since they are used so much during the holidays. - You can tell if cranberries are fresh by simply dropping them onto a counter or some other hard surface. If they bounce they are fresh! - Chopping cranberries is very tedious since each one must be individually cut in half. And when cranberries have been frozen they get soft. So chop the berries before you freeze. |
