CRANBERRY QUICK BREAD 
4 c. flour
2 c. sugar
Dash salt
1 tbsp. baking powder
1 tsp. baking soda
1/2 c. shortening
2 eggs
1 3/4 c. orange juice
2 tbsp. grated orange peel
2 c. chopped cranberries
1 c. chopped walnuts

Mix together first 5 dry ingredients. With pastry blender cut in shortening until mixture resembles coarse crumbs.

In a separate bowl mix eggs, orange juice and orange peel; beat lightly. Stir into flour mixture until moistened. Gently stir in cranberries and nuts. Pour into greased bread pans. Bake at 350 degrees for 55 minutes. Makes 2 loaves.

A couple of cranberries hints that might be useful since they are used so much during the holidays.

- You can tell if cranberries are fresh by simply dropping them onto a counter or some other hard surface. If they bounce they are fresh!

- Chopping cranberries is very tedious since each one must be individually cut in half. And when cranberries have been frozen they get soft. So chop the berries before you freeze.
