FLUFFY POTATO CASSEROLE 
2 c. hot or cold mashed potatoes
1 (8 oz.) pkg. cream cheese
1 sm. onion, finely chopped
2 eggs
2 tbsp. flour
Salt and pepper to taste
3 1/2 oz. can French fried onions

Put potatoes into the large bowl of an electric mixer. Add cream cheese, onion, eggs, and flour. Beat at medium speed until blended, then beat at high speed until light and fluffy. Spoon into a greased 9-inch square baking dish. Bake uncovered at 300-325 degrees for about 35 minutes. During the least 10 minutes, spread French fried onions over the top. Serves 4-6.
