STUFFED MIRLITONS | |
3 mirlitons 3 slices bread 2 tbsp. bacon grease 1 tbsp. chopped onion 1 egg Dash of cayenne pepper Salt and pepper to taste 1 tbsp. chopped parsley 1/2 c. chopped cooked shrimp Boil mirlitons whole, drain and cool. Cut in half lengthwise. Scoop out pulp. Moisten bread and water and squeeze water from bread. Melt bacon grease in skillet. Add bread, onion and pulp of mirlitons. Mash with fork and fry until golden brown, stirring constantly. Remove from stove and cool. Add 1 slightly beaten egg and seasoning, parsley and shrimp stuff back in muliton shells and put in greased baking dish. Cover top with buttered crumbs and bake in 350 degree oven for 20 minutes. Serves 6. |
