SWEET POTATO SOUFFLE 
1 lg. can of yams, drained (29 oz.)
1 stick butter
2/3 can Carnation milk
1 1/2 tsp. cinnamon
2 eggs
1 c. sugar

Beat all of this in mixer until fluffy, add more milk if necessary.

TOPPING:

1 c. brown sugar
1/2 c. flour
1 c. nuts (pecans)
1/3 c. butter, melted
1 1/2 tsp. cinnamon

Put sweet potato mixture in 3 quart buttered dish then top with crumble topping. Bake in 325 degree oven until bubbling and brown.
