PIEROGIES 
POTATO & CHEESE:

5 med. potatoes
1 lb. farm cheese

Cook and mash potatoes with pepper, butter and milk. Mix with cheese.

SAUERKRAUT:

1 lg. can sauerkraut
2 med. onions, chopped fine
1 stick butter

Saute onions and kraut in butter until brown.

PASTRY DOUGH:

1 1/2 c. flour
1 egg plus 1 egg yolk
1/2 c. warm water

Mix all together to form dough. Work until dough is not sticky and lumps are gone. Let rest, covered for 10 minutes. Roll and cut with a glass. Place 1/2 teaspoon of filling of choice in center and fold dough over to make it look like a moon. Place in boiling water for approximately 8 minutes. Fry in butter and onion. Serve with sour cream.
