BLUEBERRY PARFAIT 
1/2 c. cottage cheese
3/4 tbsp. caloric liquid sweetener
1 egg white
1/2 c. cream, whipped
1/2 tsp. lemon rind
Pinch of salt
1 pt. blueberries

In a bowl, beat cottage cheese until smooth. Fold in liquid sweetener, whipped cream and lemon rind. Combine egg white and salt. Beat until stiff. Fold into cottage cheese mixture. Alternate layers of the mixture and berries in parfait glasses. Chill until ready to serve.
