FETTUCCINE GARAFALO 
1 (12 oz.) pkg. fettuccine noodles
1 1/2 sticks butter, softened
1 c. whipping cream
1 c. grated Parmesan cheese
Pepper to taste
1 red bell pepper
8 oz. fresh mushrooms
1/2 lb. shrimp (optional)

Slice red pepper into inch long pieces. Slice fresh mushrooms. Place both in pan with 1/4 cup water and cook until tender. Meanwhile, if desired, peel and devein 1/2 pound fresh shrimp and boil for approximately 4 minutes or until pink. Cook noodles in boiling water according to package directions. Soften butter in microwave on medium power for 20 seconds. Cut into chunks, measure out cream and warm (but don't boil) on range top.

When noodles are done, drain them and immediately return them to the hot kettle. Quickly add butter, cream, red pepper, mushrooms, shrimp, grated cheese and pepper. With 2 large spoons, toss and stir pasta until butter melts and all cream has been absorbed, forming a thick sauce that coats noodles. Enjoy! Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
