RICE WITH BACON, TOMATOES, AND
ONIONS
 
1 c. long grain rice
1/4 c. butter
1 can (10 1/2 oz.) beef broth
3/4 c. water
1/4 lb. bacon, cooked crisp, drained and crumbled
1 onion, chopped and sauteed in bacon drippings
2 tomatoes, chopped (peel them if you have the time)

In a saucepan, combine rice, butter, beef broth, water and seasonings and stir. Simmer mixture over low heat until the rice is tender and the liquid is absorbed. Add the remaining ingredient and heat through. Serves 4 to 5.
