BRAISED SHORT RIBS 
Vegetable cooking spray
3 lbs. lean beef short ribs
1/2 c. tomato juice
6 carrots, cut into pieces
6 med. potatoes
6 sm. onions
3 stalks celery
Garlic powder, salt, pepper to taste

Coat skillet with spray. Heat skillet over medium heat; add short ribs, brown on all sides. Turn heat to medium low, add tomato juice, cover and simmer 1-1/2 hours. Skim off fat. Add vegetables and seasonings. Cover, continue cooking until meat and vegetables are tender (maybe 1 hour or more.)
