EGG PLANT CASSEROLE 
2 med. (or 1 lg.) egg plants, peeled & cut up
Pinch salt & pinch of sugar
Water to cover
1 egg, beaten
2 slices bread, broken up
1/4-1/2 c. milk
1 c. Ritz cracker crumbs
4-8 oz. grated med. sharp Cheddar cheese
butter

Simmer egg plant in salted water with pinch of sugar until done (soft). Drain. Mash the drained egg plant. Mix in the bread, beaten egg and milk. Pour into buttered or oiled casserole. Crumble crackers over. Dot with butter.

Bake at 350 degrees about 30 minutes. About 5 minutes before it's done, sprinkle the grated cheese over all. Serves 6. To reduce the calories, just leave off the crackers and the cheese and it's still delicious.
