EGG PLANT CASSEROLE 
1 med. egg plant (1 1/4 lb. sliced 1/2 inch thick)
1 lg. tomato, sliced
1 lg. onion, thinly sliced
3/4 c. butter, melted
1/2 tsp. salt
1/2 tsp. basil or oregano
4 oz. sliced Mozzarella cheese
1/2 c. bread crumbs
2 tbsp. grated Parmesan cheese

Put 1/4 cup melted butter in a dish. Slice the egg plant, then the tomato and onion and arrange in layers. Bake in a covered dish at 400 degrees for 20 minutes. Remove from the oven and add the Mozzarella cheese.

Top with a dressing made from the bread crumbs, mixed with the rest of the butter and seasoning. Then sprinkle the Parmesan cheese on top, bake uncovered for 10 more minutes or until bubbly. Serves 6.

I made this last night but with only half the butter called for and I used a yellow tomato. My husband, who is a meat and potatoes guy, scarfed this up! Simple to prepare and absolutely delicious with summer fresh vegetables. I will most definitely be making this one again!!! DELICIOUS!
