EGG PLANT CASSEROLE 
1 med. egg plant
2 med. chopped onions
1 bell pepper, chopped fine
3 stalks celery, chopped
1 c. mushroom soup
2 c. grated cheese
1/2 c. cracker crumbs
Season to taste

Boil egg plant in salt water until tender, about 15 minutes. Drain. Mix onion, celery, cup of cheese and mushroom soup. Mix well. Sprinkle cracker crumbs on top. Cook in moderate oven 15-20 minutes. Sprinkle cheese on top just as soon as it comes out of the oven.
