EGG PLANT CASSEROLE 
2 med. egg plants
1 tbsp. flour
1 tbsp. butter
1 c. milk
1 c. grated cheese
3 tomatoes, peeled & sliced
1 c. undiluted mushroom soup
1 1/2 c. buttered bread crumbs

Cook sliced egg plant 15 minutes. Drain. Make white sauce of flour, butter and milk. Grate cheese over egg plant. Add white sauce. Put tomatoes over sauce. Cover with mushroom soup. Add buttered bread crumbs. Bake at 350 degrees for 30 minutes.
