CUSTARD CREAMY PASTRY FILLING 
Scald: A vanilla bean

Blend and mix in the top of a double boiler over hot water not in: 1/4 c. flour 3 to 4 well beaten egg yolks or 2 eggs plus 2 yolks I have only used the yolks

Cream this mixture until light. Now remove the vanilla bean and add the scalded milk gradually. Stir until all is well blended. Cook stirring constantly until it just reaches the boiling point. Remove from the heat and continue to stir to release the steam and prevent crusting. Do not fill the pastry until the mixture is cool.

Before spreading the custard, add 2 or more thinly sliced bananas for Banana Cream Pie.

Add to the milk when scalded:

Stir in hazel nuts ground for a neat cream pie.
