STIR FRY CHICKEN AND BROCCOLI 
1 lb. chicken tenders, skinned, boneless and cut in 1-inch pieces
2 lbs. broccoli florets
1/2 lb. fresh mushrooms, sliced
4 green onions, cut
3 tbsp. light soy sauce
3 tbsp. cooking sherry
1/2 tsp. ground ginger
1 tsp. cornstarch
2 tbsp. water

Spray wok or skillet with Pam or any vegetable spray. Add chicken and stir fry 3 minutes, until chicken has become opaque. Remove from wok. Add broccoli; stir fry 1/2 minute. Add mushrooms, green onions, soy sauce, sherry and ginger; stir fry 2 more minute. Add cornstarch dissolved in 2 tablespoons of water and reserved chicken. Cook until done and sauce is thickened.
