SWEET POTATO PIE 
1 (9-inch) unbaked pie shell
2 (1 lb.) cans sweet potatoes, drained
3 eggs
1/2 c. milk
1/2 c. sugar
2 tbsp. butter, melted
1 tsp. vanilla
1 tsp. allspice
1/4 tsp. nutmeg
1/8 tsp. salt

Preheat oven to 400°F. Mash potatoes in a large bowl. Combine potatoes with egg yolks, milk, butter, vanilla, salt and spices. Beat egg whites until stiff, but not dry. Fold into the sweet potato mixture. When blended, gently pour into a pie shell.

Bake 40 to 50 minutes. Pie is done when knife is inserted into center of pie and comes out clean. Let cool. Top with Dream Whip or Cool Whip.
