PRIMAVERA PASTA PIE | |
STEP 1: 4 oz. pkg. spaghetti 1 beaten egg 1/3 c. grated Parmesan cheese 1 tbsp. butter STEP 2: 2 c. broccoli flowerets 1 sm. red or green pepper, cut into strips 1 med. onion, sliced & separated into rings 2 tbsp. butter 2 c. chopped cooked chicken or turkey 1/4 c. grated Parmesan cheese 3/4 tsp. dried Italian seasoning 1/4 tsp. salt STEP 3: 2 beaten eggs 1/2 c. whipping cream or light cream 2 tbsp. grated Parmesan cheese 1. For pasta crust, cook spaghetti. Drain. In medium mixing bowl stir together the egg, Parmesan cheese and butter. Stir in the hot spaghetti. Grease a 9 inch pie plate. Press the mixture evenly into the bottom and up sides of pie plate. Set aside. 2. In large skillet, cook broccoli, pepper and onion in hot butter until veggies are just crisp-tender. Stir in chicken or turkey, Parmesan cheese, Italian seasoning and salt. Remove from heat. Spoon veggie mixture into pasta crust. 3. In small mixing bowl stir together eggs and cream. Pour over veggie mixture in pasta crust. Bake, covered, in a 350 degree oven for 25 minutes; uncover and sprinkle with Parmesan cheese. Bake for 10 minutes more. Let stand 10 minutes. Cut into wedges. Makes 6 main dish servings. Nutritional information per serving: 374 calories, 26 g. protein, 20 g. carbohydrates, 21 g. fat (9 g. saturated), 180 mg. cholesterol, 415 mg. sodium, 270 mg. potassium. |
