BLUEBERRY PUDDING CAKE 
2 c. blueberries
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
3 tbsp. shortening, melted
3/4 c. sugar
1/2 c. milk
1/2 c. sugar
2 tsp. cornstarch
1 c. boiling water

In the bottom of an 8x8 cake pan place 2 cups blueberries (fresh or frozen). Mix the flour, baking powder, salt, shortening, 3/4 cup sugar and milk together and spread over berries. Mix the 1/2 cup sugar and cornstarch together and sprinkle over batter in pan. Pour the cup of boiling water over this. Bake at 350 degrees for 45 minutes. Serve warm with a dollop of whipped cream or vanilla ice cream. Serves 4-6.
