EVA'S BLUEBERRY CAKE WITH
PUDDING SAUCE
 
3/4 c. sugar
1/4 c. butter
1 egg
3/4 c. milk
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
3 c. blueberries, washed & drained

Mix all the above ingredients, except for the blueberries and 1/4 cup flour, together in bowl. Use the 1/4 cup of flour to mix with the blueberries, coating them evenly. Add the coated berries to the batter (coating them with flour will prevent them from sinking to the bottom of the cake).

Pour the batter into a greased and floured loaf pan and bake in the oven at 350 degrees for 45 minutes or until toothpick or cake tester inserted into cake comes out clean. Serve with pudding sauce.

PUDDING SAUCE:

1-1 1/2 c. sugar
1/4 c. flour
8 tbsp. butter
1 c. boiling water
1 tsp. vanilla flavoring

Beat together the sugar, flour and butter. Place this mixture in a saucepan and add the boiling water. Cook, stirring constantly until thick. Add vanilla. Serve, chilled over slices of blueberry cake.
