BLACKEYED PEAS WITH OKRA 
3 c. fresh shelled blackeyed peas
2 c. water
1 lb. smoked hamhocks
1 1/4 c. onion, chopped
1/2 lb. fresh sm. okra
1 bay leaf
1 c. celery, chopped
1/2 tsp. salt
1/8 tsp. red pepper

Combine first 8 ingredients in a heavy saucepan, bring to boil. Cover, reduce heat. Simmer 45 minutes, stirring occasionally. Place okra over peas. Cook 5 to 10 minutes longer. Cut ham from ham hocks, return to peas if desired. 1 (16 ounce) package frozen peas and 1 (10 ounce) package frozen okra may be substituted.
