STUFFED ARTICHOKES | |
1 can artichoke bottoms, drained and rinsed 1 pkg. frozen, chopped spinach 1/2 pt. half and half 1/4 c. chopped walnuts 1 clove garlic, crushed Lemon juice Grated Parmesan cheese Salt and pepper to taste Cook and drain spinach. Mix spinach in blender with chopped walnuts, half and half, and crushed garlic. Salt and pepper to taste. Arrange artichoke bottoms in greased baking dish. Drizzle with lemon juice. Stuff with spinach mixture and top with Parmesan cheese. Bake in oven at 350 degrees for 20 to 25 minutes until heated through. |
