CHILI SAUCE - FROZEN 
3 qts. chopped tomatoes
3 cups chopped celery
2 cups chopped onion
1 cup chopped green pepper
1/4 cup salt
2 cups white sugar
1/4 cup brown sugar
1 cup white vinegar
1 1/2 tsp. pepper
1 1/2 tsp. pickling spices (in a bag)

Combine first 5 ingredients and refrigerate overnight. In the morning, briefly rinse and drain in colander. (Do not skip this step!)

In a kettle, add sugars, vinegar, and spices. Bring to boil, simmer, uncovered 15 to 25 minutes. Cool by immersing pan in cold water.

To freeze, leave 1" to 1 1/2" space. Can be hot processed in a boiling water bath for 15 minutes to can in jars.

Makes 5 1/2 pints.
