GUMBO 
1 bunch green onions - chop fine
1 lg. green pepper - chop fine
1 white onion (or 2) - chop fine

Brown down in butter; first the pepper and white onion, then add green onions - 5 minutes more. Set aside.

Brown about 4 to 6 heaping tablespoons flour in 1/4 cup oil to very brown - very slow - 1 1/2 hours - stir = ROUX (Use heavy utensils.)

Take whole tomatoes out of 1 can tomatoes add to roux and cook 5 minutes more (save juice).

Add about 1 1/2 quarts hot water to roux. Cook several minutes. Add tomato juice and onion; mix. Cook about 30 minutes.

If liked, add 6 to 8 crabs or crab meat - cook 20 minutes. Add shrimp, about 1 pound. Add oysters, if wanted. Cook 15 minutes. Add gumbo FILE (very little - gets sticky). (Can omit file.) Simmer but do not boil.
