SAUSAGE STUFFED POTATOES 
8 med. potatoes
3/4 lb. Italian sausage, sweet or hot
2 slices bread, soaked in water and squeezed dry
1 tbsp. butter
1 tbsp. chopped parsley
1 tbsp. stock
1 egg yolk
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper (omit if hot sausage is used)

Boil potatoes with skins on 10 minutes. Drain, peel and with teaspoon scoop out a deep hole for stuffing. Skin sausage, add bread, butter, parsley, stock and egg yolk, mixing together very well, and stuff potatoes carefully. Place potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake in hot oven (400 degrees) 15 minutes. Serve hot. Serves 4.
