BROCCOLI & CHICKEN CASSEROLE 
1/4 c. onion
1/4 c. butter
2 c. chicken, cooked and boned (breast meat)
2 boxes chopped frozen broccoli, cooked
1 c. rice, cooked in 2 c. water
1 (10 3/4 oz.) can cream of chicken soup
1 c. shredded cheddar cheese
Salt and pepper to taste

Saute onion in butter. Combine all ingredients in buttered casserole dish. Sprinkle with additional cheddar cheese. Bake at 300 degrees for 30 minutes.
