SOUTHERN PECAN PIE
1 (9 inch) pie shell, partially baked
1/4 c. butter, softened
1 c. Western Family brown sugar
4 eggs
3/4 c. light corn syrup
1 tsp. vanilla
1 c. pecan halves
Whipped cream, if desired

Preheat oven to 425 degrees. Bake a 9 inch pie shell for about 5 to 7 minutes, so pie shell is partially baked. Allow to cool. Reduce oven temperature to 375 degrees.

In a mixing bowl, cream together butter and brown sugar until smooth. Add eggs, one at a time, beating well after each addition. Mix in corn syrup and vanilla. Pour into prepared pie crust.

Arrange pecans on top and bake for about 40 minutes or until toothpick inserted in center comes out clean. To serve, dab a small amount of whipped cream on top of each piece of pie. Pecan pie is delicious served either warm or chilled. Makes 1 (9 inch) pie.
